History
In legends, sambhar was a recipe that was traced under the Maratha ruler Shivaji. As the head chef of the palace was ill Shivaji’s son Sambhaji accidentally created a new dish called Sambhar while preparing dal. Sambhar evolved over time to what we see today and went on to become a popular side dish along with Idlis and dos and gained universal acceptance in India.
